Full Metal Alchemist, Rurouni Kenshin, Gundam Wing, I second Ghost in a shell and Outlaw Star, the Tenchus (I think that's what they're called, haven't watched it in a long time), POKEMON!!!! (jk jk, don't hurt me), Evageneon, Yakitaze Japan, and for the hell of it Vandread.

uh...did anyone mention Yu Yu Hakusho? Samurai Champloo, FLCL(short anime, but funny), Paranoia Agent(Short, but interesting), uh, a lot were already mentioned...I don't know for anime, but for manga, Sandland and Shaman King...

Outlaw Star, Nightwalker, Berserk, Fullmetal Alchemist, Samurai Champloo, Record of Loddess War, Spriggan, Samurai X, Yu Yu Hakusho, Tenchi Muyo, Tenchi Universe, Wild Arms, (based off the game series, but has a different plot.)
Personally, Nightwalker should be your first search, due to it possibly being the hardest one to find. It's only twelve episodes I think, but very good. It's about a vampire who runs a detecive agency that specializes in "Nightbreeds" or night demons. He has vowed never to hurt humans again. How does he feed? He has a lovely partner he feeds off of. One of the coolest things about Shido (the vampire) is his ability to form weapons from his own blood.
